Carrot Ginger Soup

Hello friends! Here’s the latest iteration of a Carrot Ginger Soup recipe I’ve been monkeying with since 1998, when I had some from a food truck man in Madison, WI. It’s dang tasty, and just about as healthy as you can get without a lot of trouble. Enjoy!

1. FLAVOUR MIXE

In a big wok or thick-bottomed stock pot, fry:
1 small or medium white or yellow onion, chopped fine
in 1+ tbsp coconut oil.

Get this rolling, then turn to medium/low, and get going on the Veg while the onions soften. Stir occasionally.

2. VEG

1 lb of carrots, washed and chopped into 1” chunks.
1 head of cauliflower, cleaned and separated into 1-2” trees, composting the main trunk.
Pressure cook these together for 2-3 minutes on high. I save the water.

3. SPICES, GINGER, COCONUT MILK, PEANUT BEURRE: Punch up the Flavour Mix

1-2” of ginger root, chopped tiny. Stir this into the softened onions.

1 12 oz. can of Coconut Milk. Full fat, IMO.

1/3 cup of Peanut Butter.

SPICES

Set aside two small ramekins of spices–one for Seeds, and one for powders:

Seeds:
Fennel Seed, 1 tsp
Cumin Seed, 1 tsp

Ground Spices:
1 tbsp sea salt.
1 tbsp New Mexican powdered red chile, spice level to taste. I prefer Mild.
Garam Masala, 1 tbsp
Turmeric–root or powder, 1 tsp
Optional: I use Knorr’s Chicken Flavor Bouillon, 1 tbsp or less. If you use this, use less salt.

4. BOOM! COMBINE VEG + FLAVOUR MIX

Add the cooked veg + its water to the Mix. Stir. Raise the heat to medium or medium/high.

Add another 2-3 cups of water. Stir until everything is uniform and swimming. 

Keep heat up until everything is boiling.

5. COOK FOR a WHILE

Turn the heat to medium/low, cover, and clean up while Alchemy happens–10 minutes. You might check in periodically

6. BLEND

I use an OXO Blender Wand thing, which is a total lifesaver. However you do it, blend the whole mess until it’s a bright orange bisque. Add water if it’s too thick.

7. SERVE

Garnishes: chopped cilantro, chopped peanuts, plain yogurt. Pistachios are great with it.

8. UPGRADES

Chopped, steamed kale turns this into a delicious health lunch.
